Vines are fertilized with natural compost and yields are severely limited by both pruning and green harvest. Grapes are harvested manually and vinified without SO2. The Nouveau is fermented naturally using carbonic maceration for a 5-day ferment and bottled unfiltered.
Cherry red color with purplish reflections, bright and clear with lots of fat. Grapes and red fruits reminiscent of blackcurrant and raspberry. Clever balance between freshness and creamy structure, leading to a generous finish with notes of red fruits.
